最近在家中无聊又开始捣鼓面粉了
这次一起来玩咖啡巧克力蛋糕吧,刚好配你们的黑咖☕️或热茶🍵,走起~🌱
🍰蛋糕材料:
5个蛋🥚
咖啡液:18g(速溶黑咖啡8g)
可可粉:12g
热水/牛奶:50g
低筋面粉:63g
细砂糖:65g
夹心材料:
任意你喜欢的水果,不放也可,我就没放🤣
淡奶油:150g
细砂糖:15g
烤盘:28x28

🌱步骤:
1⃣️:蛋黄蛋清分离,蛋清冰箱冷藏待用;

2⃣️:可可粉倒入热水或热牛奶搅拌至无颗粒后再加入黑咖啡液搅拌均匀,放一边待用;

3⃣️:可可黑咖啡液倒入玉米油用手动打蛋器搅拌均匀乳化后再过筛加入低筋面粉“Z”字搅拌均匀;

4⃣️:加入蛋黄继续“Z”字拌匀直至面糊顺滑;
(这时可以预热烤箱155C/310F)

5⃣️:取出蛋清,加入几滴柠檬汁或白醋,细砂糖分三次加入蛋清中并开始打发;

6⃣️:打发好的蛋清细腻光泽,提起搅拌头可以明显看到有小弯钩🪝或倒扣不流的状态就可以挖两大勺到蛋黄糊中,用炒菜的手法搅拌混合均匀后再将全部的蛋黄糊全部倒入蛋清中,翻拌均匀;

7⃣️:将搅拌好的蛋糕糊提高一定高度慢慢倒入烤盘中,抹匀,高摔震出气泡两次,入烤箱;

8⃣️:烤箱上下火155C/310F烤35分钟,出炉后马上震摔出热气;

9⃣️:淡奶油加糖打发至蓬松有纹路,蛋糕撕掉油纸,均匀涂抹并借用擀面杖把蛋糕卷起;

1⃣️:每家烤箱都有自己的脾气,所以烘烤时间与温度都仅供参考;
2⃣️:可可粉一定要用热水或热牛奶搅拌化开,不然会有很多小疙瘩,颗粒;
