看多了抹茶千层、芒果千层和普通的巧克力千层,想不想做一个稍微不一样一点的千层呢?巧克力焦糖奶油千层满足你!巧克力香的饼皮配上焦糖味十足的奶油馅料,甜而不腻,吃得根本停不下来,唯一的问题就是小心吃多了发胖哦~
下面废话不多说,开始讲怎么做。过程超详细!
第一步:准备
厨具
搅拌碗、8寸平底锅、电动搅拌器、厨房秤、蛋糕刀(选用)、面粉筛、温度计
辅助用品
油纸、冰块(提前冻好哟)
材料
饼皮:低筋面粉180g、黄油30g、可可粉16g、盐2g、糖60g、鸡蛋4个、牛奶540g
馅料:糖200g、淡奶油240g、淡奶油(打发用)480g、水60g
表面图案:可可粉适量、糖粉适量
第二步:制作饼皮
1.将面粉、糖、可可粉、盐放入容器内

2.中间挖一个洞

3.打入鸡蛋,部分过程图是上次做6寸的时候拍的,所以此处鸡蛋应为4个

4.从四周开始少量多次的向中间搅拌,直至搅拌均匀

5.用锅加热黄油直至融化,我用的是小号的松饼锅

6.黄油融化后关火

7.黄油冷却至65度左右

8.将黄油加入刚才的面糊,搅拌均匀

9.将牛奶少量多次的加入面糊中,搅拌均匀

10.搅拌好的样子

11.将油纸裁成一片一片的提前准备好

12、中火热锅,可以在锅中间滴一滴水,发出呲呲声的时候将火略微调小一点

13.放入适量的面糊

14.迅速转动平底锅。使面糊均匀覆盖锅底,转中火

15.饼皮出现气泡就可以转小火,用刮刀沿饼皮转一圈,然后将饼皮扣在油纸上

16.一层油纸一层饼皮,直至摊完所有的饼皮,放入冰箱冷藏

第三步:制作馅料
1.将水和糖放入锅中,边加热边转动和搅拌,同时将240g的淡奶油放入微波炉加热1分钟至温热,备用

2.待糖浆变至金黄色关火,稍稍冷却一下

3.加入刚才的淡奶油,这时奶油会突然沸腾,不要慌,迅速搅拌均匀,放入碗中晾凉

4.将480g的淡奶油打至六分发,此时有厨师机最好,调到最大速很快就打好了,手持的电动搅拌器需要耐心一点,普通的搅拌器就不推荐了,打到手酸

5.取少量打发的奶油假如刚才的糖浆,搅拌均匀

6.再将剩余的奶油都加入到糖浆中,图为上一步搅拌好的样子

7.在盆中或者大锅中放入冰水

8.将混合了糖浆的奶油坐冰水中打发

9.打至八分发,我是在打发后放如冷冻室20分钟,更便于涂抹

第四步:组装饼皮和馅料
1.将馅料涂抹在饼皮上,涂抹均匀,边缘不用涂抹,然后盖上一层饼皮,轻轻压平,再涂抹馅料,如此循环。有蛋糕刀辅助的话,会更轻松的涂抹平整

第五步:装饰图案
1.用面粉筛筛上一层可可粉,放入冰箱冷藏4小时以上

2.用电脑打出自己喜欢的装饰图案,拿刀将图案镂空。此处应注意,密闭的图案要动一下小心思,比如图中的a、d、p,假如将我自己画上的金线部分刻下来,中间的小圆片将和整张纸分离

3.待蛋糕冷藏号之后,把纸片轻轻放在蛋糕上,筛上糖粉就大功告成啦!糖粉不要在冷藏之前筛上去,不然会吸收冰箱里的水分,变得看不出来
