北海道吐司是一种比较偏中国性的吐司,口感细腻润滑,非常好吃。我最喜欢一点点的用手撕着吃了。
以下分量可做一条450克吐司
制作材料

制作步骤

首先把中种面团里液体材料放入面包机中

再加入所有剩下的干性材料

接着开启面包机的揉面模式,把材料揉成面团后关闭程序,然后把中种面团直接留在面包机里进行发酵,或者也可以拿出来放在干净容器里盖上保鲜膜发酵。

发酵至1.5-2倍大即可。

然后把中种面团拿出来掰成小块放回面包机里

接着把除黄油外的主面团材料全部放入面包机里

然后开启面包机的揉面模式进行揉面,揉至扩展阶段,即是面团拉起有筋度,开始初步形成薄膜的时候

加入主面团材料里的黄油

继续揉至完全,能拉出薄膜即可。这个面包机揉面程序大概是1-1.5小时
其实也可以用厨师机代替,厨师机要看本身的运作功率有多大,小功率的可能揉面时间会稍长一些,功率大的揉面时间就相对快一些。所以这里揉面的时候要看面团的状况,而不是看时间长短哦!

然后把面团拿出来

分成三等份,盖上保鲜膜醒面15-20分钟

然后拿出一个面团,用擀面杖擀开成长形

再卷起来

然后90度转过来再擀开卷起来

把面卷放入吐司盒里,表面洒上一点点水

然后放入烤箱里,开启烤箱的发酵功能,35摄氏度(95华氏度),发酵至8分满模,大约1-1.5小时左右。

预热烤箱至180摄氏度(350华氏度),放进去烤35分钟。途中要注意上色程度,如果上色满意后要立刻盖上锡纸以免上色过度。

烤完拿出来,稍微把吐司模打侧震动几下,吐司就会自动脱模而出了......待凉后即可食用。
