食材:
鸡蛋四只、低筋面粉80g、果酱适量、盐1g、细砂糖40g、植物油40g、橙子糖水60g

橙子🍊切薄片,尽量切薄点,太厚的话等下蛋糕卷不起来也不好切,影响美观

橙片放到奶锅or平底锅中

加入2大勺细砂糖和适量清水,清水多少在于你的锅大小,等下由于用到60g橙子水,而在煮橙子过程中水分会挥发,所以大约装进不超过100g就好,剩余的可以倒掉
开小火煮10分钟,等橙片变软即可

取出橙片,用厨房纸吸干水分,橙子水倒出放凉,再铺好放到垫好油纸的烤盘中备用

过筛低筋面粉、盐

打发蛋白霜
蛋白中挤一点柠檬汁,用电动打蛋器低速打发蛋白直到出现粗泡

分三次加入细砂糖,打发蛋白霜到硬性偏湿即可,即拉起打蛋器有尖钩

先放1/3蛋白霜到面糊中,用刮刀用翻拌手法从底往上拌匀

然后再将拌匀好的面糊倒入剩余的蛋白中,继续翻拌均匀至光滑细腻无颗粒

倒入烤盘中,用刮刀轻轻抹平不平整的地方,震走小气泡

放到预热好的烤箱里,中层335华氏度烤20分钟

趁热立刻倒扣蛋糕卷,将油纸撕开放凉备用

准备一张长长的油纸,将放凉后的蛋糕卷平铺(ps:橙片在底部),抹上薄薄的果酱,卷起蛋糕,包好放冰箱冷藏一会定型
