相传片儿川面,还是奎元馆(百年老店)初创时小面店的看家面,传说是清时某年浙江举行乡试到杭州来赶考的读书人很多,各地考生齐集杭城,店主为招徕这些读书人的生意,就以倒笃菜、笋片、猪肉片烧制成的大众化面专门供应外地书生。在所售之早餐面中添加三只蛋,寓“连中三元”之意。时有一书生因奎元馆面好价廉,常来吃面,后得中乡试举人第一名“解元”,放榜之日,特到店里向店主致谢,因小面店尚没有招牌,就当场题写“奎元馆”三字作为招牌,从此,奎元馆的片儿川面名声大振,食客盈门。凡来杭州应考者,都慕名前来吃面,图个吉利。
片儿川是杭州独有的面,很多人看名字根本不知道这是什么东西。有些人会说,这不就是雪菜肉丝面吗?错错错!今天让我来教你,怎样用小细节,成就大味道!

碱水面 2/3袋(后面有图)
里脊肉片
雪里蕻(雪菜)
冬笋
嫩肉粉(淀粉也可以)
糖
生抽
盐
料酒

里脊肉切片,洗干净,控干
细节1: 肉千万不能还在滴水,不然腌不好的!

加入腌料:糖1/3茶匙,嫩肉粉(可以淀粉代替)2茶匙,酱油1茶匙,料酒1茶匙,生抽1茶匙
抓匀以后腌制10分钟

面条我买的是上海面条,和杭州的是差不多的,这一袋看着小,其实烧好有很多!我大概用了1/2-2/3的样子,两个人。

细节3: 每一根都要冲到,这样不会涨开,也不会粘在一起,更有劲道

细节4: 油温还低的时候就下锅,这样不会老,腌制过的肉片非常非常的嫩!

细节5:用筷子!不然肉的一面焦了,另外一面还没熟。均匀的煎,不用里面熟透,只只要表面不生就可以了!

加入冬笋,先炒到断生,加入雪里蕻(没有的话用雪菜)

加入肉片,炒熟

加入热开水,然后加入生抽少许,有这个颜色就好,糖一茶匙,盐(先喝一口,慢慢加到你喜欢的咸淡)

煮开以后下面条,面条弄散在汤里以后,就可以出来了,别煮太久。
