酒酿也叫醪糟,由蒸熟的糯米拌上酒曲发酵而成。在我的童年记忆里,每次老妈都会做满满的一缸酒酿,下学回来第一件事就是去冰箱挖几口甜酒吃,好甜美呀。。。
酒酿是江南人从小喝到大的,口感甜美营养丰富,甜浓鲜香。有补气、生血之功,夏日更兼清热解暑作用.在许多菜肴中醪糟也是必不可少的调味品,比用料酒烹调更美味。
做好的酒酿还可以用来煮酒酿糯米丸子,醪糟鸡蛋等.通常是放几颗去核红枣, 枸杞小火先烧开,再打鸡蛋下去,煮滚后再加入酒酿.一碗醪糟鸡蛋就好了,在寒冷的冬天喝上一碗,浑身暖乎乎美容又养颜!
之前我也做过酒酿,可效果一般,有点沮丧。直到这次我又准备卷土重来,没想到如此成功,让自己都好感动呀!✌️ 快来看看我是如何一步步做成功的吧!(参考了田园时光美食,甜酒甜的配方,又加入了自己的心得)

做酒酿零失败经验之谈🤗
先来看做酒酿要准备的用具
1.糯米2杯
2.安琪甜酒曲4克(一袋是8克,一半就可)
3.比较密实的漏筛一个
4.玻璃罐头瓶3个,开水煮烫后,晾干.
5.一大瓶矿泉水或凉白开水
第1⃣️步:泡米丨清洗糯米三遍左右,将洗好的糯米加水浸泡10-12小时(泡至米芯中空,手碾即碎)

第2⃣️步:蒸熟丨将浸泡好的糯米沥干水后,平铺在蒸笼上隔水蒸熟。蒸之前在糯米上挖几个洞会受热更均匀。大概35-40分钟左右,变透明了就好。蒸好的糯米饭倒入漏筛,用矿泉水冲,边冲边用勺拌拌,感觉到温度已温温热了,就不要冲了。

第3步:拌曲丨把甜酒曲留下约一大勺粉备用,把剩下的酒曲粉均匀撒入蒸好的糯米饭中,加入适少许矿泉水拌匀。把拌好后的糯米装瓶,手沾点水把瓶里的糯米压压紧实.再用干净无油的筷子在瓶的中央拨拉个小洞, 便于观察出酒的状况。再撒上先余留的酒曲粉,在表面上撒一层.

第4步:发酵丨密封好放在30℃的温暖环境下发酵24~36小时即可。要是温度比较低,可以全程都在烤箱里辅助发酵,只要把烤箱灯打开就可。切记:只是把oven light 烤箱灯打开就可。千万不要开温度!像我们中西部气温低,放了3天才发酵完毕。

把玻璃瓶盖上盖子,密封,放烤箱,把烤箱的灯打开就好.注意*****:只是开灯,不要开温度哈~切记!

在烤箱里"捂"上1天到2天.夏天一般一天,而冬天差不多要两-三天,或看到瓶子里已出水了或洞里的水已满,而且转动瓶子时,可看到里面的糯米已可以同瓶子分离就好了.
捂好后的酒酿直接放入冰箱冷藏室,这样就停止发酵了,2-3天后就可以享用了,放冰箱后酒酿会越来越甜哟!

碎碎念:亲们只要掌握了以下几点,保证每次都可以成功!
1.一定要保证一切容器,工具无油,否则会长毛.最好用厨用纸揩搽容器.
2.拌酒药时,温度要温温热,用手摸能感觉到一点点温度.温度过高,酒酿发酸.温度过低,又不能发酵好.
2.才做好的酒酿最好先放一放再吃,否则会有热气.
3.只用打开烤箱里的那个灯,不要开温度.
4.做好的酒酿可以放冰箱一到两个月都不会坏,还会越来越甜!
