初夏了,怀念可以无拘无束外食的日子,作为朝九晚五的普通双职工家庭,周末的时候,我们尤其喜欢外出早午饭,其中粤式早茶是我们特别喜欢的品项之一,点几笼蒸菜,再切半只烤鸭,配上或顺滑的豆浆,或滋养的粥,实在悠哉美味。 尤其喜欢腐竹卷,柔韧的外皮满溢豆香,包裹鲜香的内陷,香菇,猪肉,鲜虾的韧,冬笋的脆,一口咬下去,满口的满足感!
无奈实在嘴馋,靠着记忆中的味道,也捣鼓出了这道免蒸的快手腐竹卷。还原度据说有90%以上吧!

首先,我们需要准备的材料有(口味都可以酌情调整):
猪肉末 (肥瘦相间的更好吃) 半磅
虾仁: 16-20大小的 8粒
干香菇: 5粒
腐皮: 半包
葱,姜,蒜: 适量
料酒: 10克
水淀粉: 5克
生抽: 5克
盐: 2克
糖: 5克
蚝油: 5克
五香粉: 2克
麻油: 5克

香菇需要提前泡发,腐皮如果是用的之前开袋过的,最好泡一下水,包起来也比较好看,虾和肉末都解冻

拌内陷:
准备一个大的生食搅拌碗,放入解冻好的猪肉

虾仁切丁 (我喜欢稍微切大些,口感比较好)
发好的香菇切丁
葱和姜切末后直接加到搅拌碗

再加入料酒,糖,生抽,五香粉,水淀粉,部分蚝油,盐不一定要加,最后用来调咸淡

全部加好后,拌匀之后放一边待用

开始包腐竹卷
拿出准备好的腐皮 尽量选择 或者改刀成一样大小的长方形
然后按照包春卷的方法一个个包起来

把内陷以长条形置于腐皮的一端大概1/5处,同方向剩余的腐皮包住内陷,纵向两边往内叠,然后顺着往上把剩余的腐皮卷起
柔软的腐皮非常好包 放置包好的腐皮卷是注意把收口的地方朝下 可以暂时压一下 不用担心现在看起来不紧 上锅之后 锅的温度把卷子们都收的紧紧的。

之前查菜谱的时候,发现好多方子都需要先炸,再蒸,觉得麻烦,也不太健康,最重要的是没有时间啊! 这种做法加水,加盖,其实跟蒸的原理差不多,比较快,吃不完的二次加热直接进微波炉就好,口感也差不离!
