前两年国内一度很流行鲍师傅的肉松小贝,圆圆的,很松软,酱厚糕松,肉松香,海苔脆,很是招人喜欢,作为沙拉酱和肉松的铁粉,常常排队到窗口,买到最大限购额度,再开始逛吃逛吃的神仙生活。 梦啊! 美啊!
周末Costco抱回来一桶一磅装的猪肉酥,于是我们家就有了一大盘的肉松小贝贝,方贝贝,是不浪费一点原材料的贝贝!

原材料:
蛋糕胚:
鸡蛋: 均码五个
牛奶: 80克
低筋面粉: 80克
玉米淀粉: 20克
细白砂糖: 20克+60克
黄油: 80克
铺料:
美乃滋酱:适量
海苔: 一盒
肉松: 适量

首先,准备蛋糕胚,玉米淀粉极大程度的提升了整个贝贝的松软度,最好不要省
黄油微波炉软化

后倒入搅拌碗,混入牛奶,糖50克
搅匀,黄油遇到冷的牛奶,会结成小坨,所以看到有的方子会用更流质的色拉油来代替黄油,不过我更喜欢有黄油的蛋糕胚,更香!

再加入低筋面粉和玉米淀粉,混匀! 有时间可以筛一下面粉和淀粉,更细致松软。可是我没有那个时间😂

打入五个鸡蛋黄,再混匀,蛋清另外拿一个无油无水渍的空碗放在一旁待用

混好后,单独打蛋清,蛋清里倒入剩余的60克白砂糖,搅拌器中速打发到可以拉出小尖角即可

打发好的蛋清分三次混入之前打好的面糊,混入的时候上下混匀,如果最后不想让蛋糕胚结成一个鸡蛋厚饼,请尽量避免打圈的方法混匀。

混好后,面糊倒入铺好烘焙纸的大烤盘,烘焙纸很重要!

烤盘入预热好的烤箱,330度烤20分钟。家里香气四溢。
蛋糕胚烤制的过程中,可以开始混合铺料。准备一个稍平的小碗,或者盘子,混入肉松和剪碎的海苔,抓匀备用。

蛋糕烤好后,表面金黄,均等切开。一半匀涂美乃滋,厚薄随意。

再把另一半平铺在涂好美乃滋酱的这一半上面,再涂一层酱,之后就可以均匀的撒上肉松海苔碎了。

再切分成小块,我们就获得了一整盘的肉松小贝。特别爱肉松的小伙伴可以再准备一碗美乃滋,把切好的贝贝先整身裹一层酱,再滚一层肉松海苔碎。自己做的料就是足呢!
