烤盘大小: 9in×9in
面团材料👇
*高筋面粉 413g
*细砂糖 49.5g
*盐 5g
*冰牛奶 296g
*速发干酵母 5g
*室温无盐黄油 33g
淋面材料👇
*黑巧克力 66.1g
*白巧克力 66.1g
制作步骤👇
1. 将面粉,糖和盐加入厨师机,最低速一分钟混合。

2. 加入酵母,低速混合几下后逐渐倒入牛奶。牛奶的量根据面粉牌子的不同吸水性也不一样,可以自行增减5g左右。
中速(kitchenaid 3档) 混合10分钟至面团表面光滑且能摔打盆壁。

4. 盖上保鲜膜,29°C发酵90分钟至两倍大。用手戳肚脐,不回缩(没发好)不塌陷(发过了)。

5. 光面朝下倒扣在案板上,简单的拍几下拍成个圆饼。用刮铲大致分割成16份,然后用厨房称帮忙再精确称重,多减少补,每份在48g~49g。
6. 整形成小圆球。我个人的方法是,先拍扁,对折,再对折,两端封口对齐收紧,再整体掐紧,翻过来单手揉圆。盖上保鲜膜,休息15分钟。

7. 将烤盘刷油后铺上烤纸,然后对每个小面团依次进行二次排气整形(压扁->圆球)。方法和之间一样。
8. 全部整理好后放进烤盘,铺上保鲜膜,烤箱底部放一个烤盘,接你家自来水管最烫手的水,35°C发酵90分钟至2倍大,能高出烤盘1~1.5cm的程度。

9. 预热烤箱140°C,开旋风(无旋风150°C), 中下层,17分钟左右。中间一旦发现上色到位就用锡纸盖住。
烤完后立即放架子上降温,将周围的烤纸也揭下来。
10. 黑白巧克力分别切碎,微波炉10秒10秒的叮,直到完全融化无块状。装进12in裱花袋,尾巴用夹子夹紧。
